I'm always looking for a way to squeeze more vegetables into my day, particularly at the beginning of my day. With the exception of the potato, there aren't many veggies that regularly make the morning cut, at least not in my house. It's too bad because it would be way easier for me to eat a nice buttery artichoke in the morning than a hunk of buttered toast. That's why I like omelets. I feel like I can really load them up with veggies.

My daughter, Mina, just turned 7 so we threw her a birthday party. Let me begin by saying, I hate serving cupcakes (or cake) to kids at birthday parties. What usually happens is I spend hours baking and frosting dozens of cupcakes only to watch kids spend minutes licking off the frosting and dumping the rest in the garbage. Now, I'm not upset that the cupcakes don't get savored. I understand. I used to be a kid. But why spend the time and effort to make and serve something nobody really wants in the first place? So a few years ago we started thinking outside the box. Last year we served ice cream sundaes and this year we made coke floats and cookies. They were both a huge success.
